Khurma is a traditional Bhojpuri sweet from the Bhojpur district of Bihar. It is primarily made from chhena (Indian cottage cheese) and sugar syrup. The chhena is cut into irregular shapes, fried, and then steeped in a sugar syrup to give it a sweet, crunchy, and juicy texture. Raw in appearance, it's juicy in taste with a distinctive aroma.
