Adauri are sun-dried lentil nuggets that are a key part of the diet of the Maithil and eastern Tharu communities in Bihar, India and the eastern plains of Nepal. They are made from the flour or paste of lentils like mung beans, chickpeas, or black lentils (urad daal). Adauri can be used to make sabji and other dishes, and are often mixed with potatoes and brinjal. In some parts of India, they are also known as mangodi.
